Ingredients

Scale
  • 1 lb chicken thighs, chopped

  • 1 lb turkey sausage, sliced

  • ½ lb shrimp, peeled and deveined

  • 1 cup long-grain rice

  • 1 large onion, chopped

  • 1 green bell pepper, chopped

  • 1 celery stalk, chopped

  • 2 cloves garlic, minced

  • 1 (14 oz) can diced tomatoes (for Creole version)

  • 2 cups chicken broth

  • 1 tsp smoked paprika

  • ½ tsp cayenne pepper (adjust for heat)

  • 1 tsp dried thyme

  • 1 tsp dried oregano

  • 2 tbsp vegetable oil or butter

  • Salt & black pepper to taste

  • Fresh parsley and green onions for garnish

  • Lemon wedges (optional)

Instructions

  • Prep the Holy Trinity – Chop onions, bell peppers, and celery. Mince garlic.

  • Brown the Proteins – Heat oil in a large Dutch oven. Brown chicken and turkey sausage until golden. Remove and set aside.

  • Sauté Vegetables – In the same pot, sauté onions, bell peppers, celery, and garlic for 3–5 minutes until fragrant.

  • Add Rice & Spices – Stir in rice, smoked paprika, cayenne, thyme, and oregano. Toast for 1–2 minutes.

  • Add Liquids & Cook – Pour in chicken broth and diced tomatoes (Creole version). Stir and bring to a boil. Reduce heat, cover, and simmer for 20–25 minutes until rice is tender.

  • Add Proteins – Return chicken and sausage to the pot. Add shrimp during the last 5 minutes of cooking.

  • Rest & Garnish – Let the Jambalaya rest for 5 minutes. Garnish with parsley, green onions, and lemon wedges before serving.

Notes

Brown the meat properly for maximum flavor.

Stir rice gently and avoid overcooking to prevent mushiness.

Adjust heat with cayenne pepper or hot sauce gradually.

For seafood versions, add shrimp last to avoid overcooking.

Jambalaya tastes even better the next day; store leftovers in airtight containers.
