- 4 cups of fresh peaches (peeled and diced)
- 1 to 2 jalapeños (seeds removed and finely chopped)
- 2 cups of granulated sugar
- 1/4 cup of lemon juice (freshly squeezed)
- 1 packet of fruit pectin (like Sure-Jell)
- 1/2 teaspoon of salt
- Optional: a dash of ground cinnamon for warmth
- Optional: additional jalapeño slices for garnish
Instructions
- Start by washing your peaches thoroughly. Peel and dice them into small pieces. Toss them into a large pot.
- Next, add your finely chopped jalapeños to the pot. Mix in the sugar, salt, and lemon juice, stirring well. Allow the mixture to sit for about 10 minutes.
- Place the pot on medium heat and bring the mixture to a gentle boil, stirring frequently. Add the fruit pectin and stir until it dissolves completely.
- To test if it’s ready, drop a small spoonful onto a plate. If it holds its shape, you’re good to go!
- Once you have your desired consistency, remove the pot from the heat. Pour the jam into sterilized jars, leaving about a quarter inch of space at the top.
- For a proper seal, process the jars in a boiling water bath for about 10 minutes.
Notes
Avoid overly ripe peaches for better texture and ensure proper sterilization of jars to prevent spoilage.
