- 2 pounds beef chuck, cut into 1-inch cubes
- 3 tablespoons olive oil or vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 medium carrots, sliced
- 3 medium potatoes, peeled and diced
- 2 cups beef broth
- 1 tablespoon tomato paste
- 2 teaspoons Worcestershire sauce
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- 2 pounds Yukon Gold potatoes, peeled and quartered
- 4 cloves garlic, peeled
- 1/2 cup milk
- 1/4 cup butter
- Chives or additional parsley for garnish (optional)
Instructions
- Sear the beef in a pot with heated oil until browned, about 4-5 minutes per side.
- Cook the chopped onion and garlic for 3 minutes.
- Combine the beef back into the pot with tomato paste, broth, Worcestershire sauce, bay leaves, thyme, salt, and pepper.
- Add the sliced carrots and diced potatoes, then bring to a gentle boil.
- Let it simmer covered for 1.5 hours, stirring occasionally.
- While the stew simmers, boil the potatoes and garlic until fork-tender.
- Mash the cooked potatoes with butter and milk to your preferred consistency.
- Serve the stew topped with parsley alongside creamy mashed potatoes.
