Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 ripe mango, peeled and diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt to taste

Instructions

  1. Begin by marinating the chicken. In a medium bowl, whisk together honey, lime juice, olive oil, minced garlic, cumin, paprika, salt, and pepper. Place the chicken in a zip-lock bag or shallow dish, pour the marinade over them, and let sit for at least 30 minutes in the refrigerator.
  2. While the chicken is marinating, prepare the mango salsa. In a separate bowl, combine diced mango, chopped red onion, diced red bell pepper, minced jalapeño, fresh cilantro, lime juice, and a pinch of salt. Mix gently and allow it to sit for about 10 minutes.
  3. Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, letting excess liquid drip off, and grill for about 6-8 minutes per side or until cooked through.
  4. Once the chicken is cooked, let it rest for a few minutes, then slice it and serve topped with the fresh mango salsa.

Notes

For a vegetarian option, substitute chicken with grilled tofu. Adjust the heat in the salsa by modifying jalapeño or using milder peppers.
