- 1 pound boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice (freshly squeezed)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste

- 2 cups cooked jasmine rice
- 1 ripe avocado, diced
- 1/4 cup fresh cilantro, chopped (optional)
- Juice of 1 lime
- Sliced radishes for crunch (optional)
- Crumbled feta or cotija cheese for creaminess (optional)
- Chopped green onions for garnish (optional)
Instructions
- Start by marinating the chicken. In a bowl, whisk together the honey, lime juice, olive oil, minced garlic, lime zest, salt, and pepper. Place the chicken breasts in a zip-top bag or a shallow dish, pour the marinade over the chicken, seal it up, and toss to coat. Let it marinate for at least 15 minutes at room temperature, or for a couple of hours in the fridge.
- Prepare the avocado rice while the chicken is marinating. In a large bowl, combine the cooked jasmine rice, diced avocado, chopped cilantro, lime juice, and a pinch of salt. Gently fold the ingredients to combine without smashing the avocado too much.
- Preheat your grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade, letting the excess drip off, and grill for about 6-7 minutes on each side or until it reaches an internal temperature of 165°F.
- Remove the chicken from the grill and let it rest for a few minutes before slicing to allow the juices to redistribute.
- Stack by beginning with a generous scoop of avocado rice at the bottom of your plate. Place sliced chicken on top, add more avocado if desired, drizzle with remaining marinade, and finish with optional toppings.
Notes
For a vegetarian twist, swap chicken for grilled tofu or chickpeas. For lower-carb options, use cauliflower rice instead of jasmine rice.
