A quick and delicious meal featuring juicy shrimp in a sweet and savory garlic sauce, served over rice or quinoa.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons fresh garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil (or any cooking oil)
  • 2 cups cooked rice or quinoa
  • 1 cup broccoli florets (steamed)
  • 1 red bell pepper, sliced
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Salt and pepper to taste

Instructions

  1. Begin by prepping your shrimp. Ensure they are thawed, peeled, and deveined. Rinse them under cold water and pat dry with paper towels.
  2. Make your honey garlic sauce by whisking together honey, soy sauce, minced garlic, and minced ginger in a medium mixing bowl.
  3. Heat a large skillet over medium-high heat and add the olive oil along with the sesame oil. Add the shrimp to the skillet in a single layer and cook for about 2-3 minutes on one side.
  4. Flip the shrimp and pour the prepared honey garlic sauce over them. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  5. Prepare your rice or quinoa according to package instructions and optionally steam your broccoli florets during this time.
  6. Plate with a scoop of rice or quinoa at the bottom of your bowl. Top with honey garlic shrimp, arranging the steamed broccoli and sliced bell pepper around it.
  7. Finish with a sprinkle of chopped green onions and sesame seeds for added flavor and crunch.

Notes

For a vegan version, substitute shrimp with tofu or chickpeas. Adjust sauce seasoning as necessary.
