- 1 pound boneless, skinless chicken thighs or breasts, diced
- 1 cup honey BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup bell peppers, sliced
- 1 cup corn
- ½ cup green onions, sliced (for garnish)
- Optional: shredded cheese, avocado slices, or cilantro
Instructions
- Begin by heating the olive oil in a large skillet over medium heat. Season the diced chicken with salt, pepper, garlic powder, and onion powder.
- Add the seasoned chicken to the skillet and cook for 5-7 minutes until browned and cooked through.
- Pour in the honey BBQ sauce and stir to coat the chicken. Simmer for another 5 minutes.
- In a separate skillet, toss the sliced bell peppers and corn over medium heat for 4-5 minutes until tender.
- Layer the cooked rice in a bowl, top with the honey BBQ chicken mixture and sautéed vegetables.
- Sprinkle shredded cheese on top if desired, or add avocado slices and garnish with green onions or cilantro.
Notes
For a vegetarian option, substitute chicken with tofu or chickpeas and use plant-based BBQ sauce.
