  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp salt
  • 1 cup powdered sugar
  • 2 tbsp pure maple syrup
  • 1–2 tbsp milk (adjust for desired consistency)

Instructions

  1. Start by preheating your oven to 325°F (160°C). Gather your ingredients and line a 9×9-inch baking pan with parchment paper.
  2. In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the mixture resembles wet sand. Press this mixture into the bottom of your prepared pan and bake for 10 minutes.
  3. While the crust is cooling, prepare the cheesecake filling. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugars, mixing until combined.
  4. Add the pumpkin puree, eggs, vanilla extract, and spices (cinnamon, nutmeg, ginger, and salt) to the cream cheese mixture. Beat until fully combined and creamy.
  5. Pour the cheesecake filling over the cooled crust, spreading it evenly. Bake for 40-50 minutes, or until the edges are set while the center still jiggly.
  6. Once baked, remove from the oven and cool completely in the pan. Refrigerate for at least 1 hour before cutting into squares.
  7. For the maple glaze, whisk together the powdered sugar, maple syrup, and milk until smooth. Drizzle over the chilled pumpkin cheesecake bars before serving.
