Instructions
- Preheat your oven to 350°F (175°C).
- Combine the pumpkin puree, vegetable oil, and sugar in a mixing bowl and whisk until well blended.
- Crack in the eggs and add the water or applesauce; stir until smooth.
- Whisk together the flour, baking soda, baking powder, spices, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
- Fold in optional nuts, chocolate chips, or raisins if desired.
- Grease a 9×5-inch loaf pan and pour the batter in, spreading evenly.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
