Ingredients

  • 3 cups rolled oats
  • 1 cup nuts (almonds, walnuts, or pecans)
  • 1/2 cup seeds (pumpkin seeds, sunflower seeds, or chia seeds)
  • 1 cup honey or maple syrup
  • 1/2 cup coconut oil (melted)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1 cup dried fruits (raisins, cranberries, or apricots)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine rolled oats, nuts, and seeds in a large bowl.
  3. Whisk together melted coconut oil, honey or maple syrup, vanilla extract, salt, and cinnamon.
  4. Pour the wet mixture over the dry ingredients and stir until evenly coated.
  5. Line a baking sheet with parchment paper and spread the granola mixture evenly on it.
  6. Bake in the oven for about 25-30 minutes, stirring halfway through.
  7. Remove from the oven and let it cool completely.
  8. Mix in dried fruits or chocolate chips after cooling.

Notes

Store in an airtight container at room temperature. For a crispier granola, reheat in the oven for about 5 minutes if it becomes soft.
