Homemade Hamburger Helper creamy one-pot dinner

Homemade Hamburger Helper Recipe (Creamy, Cheesy, Better Than the Box)

  • Author: Mark Bennett
  • Total Time: 30 minutes

Description

This Homemade Hamburger Helper is creamy, cheesy, and packed with savory beef flavor — all made in one skillet in under 30 minutes. It’s better than the boxed version, uses real ingredients, and delivers that classic comfort food vibe with a homemade upgrade. Perfect for busy weeknights, picky eaters, and anyone craving an easy, cozy dinner.

Ingredients

• 1 pound ground beef
• 2 cups uncooked elbow macaroni
• 2 cups beef broth
• 1 cup milk
• 1 tablespoon tomato paste
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• ½ teaspoon paprika
• Salt and black pepper to taste
• 1½ cups shredded sharp cheddar cheese
• Optional garnish: chopped parsley

Instructions

  • In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess grease if needed.

  • Stir in garlic powder, onion powder, paprika, salt, pepper, and tomato paste. Cook for 30 seconds until fragrant.

  • Add uncooked pasta, beef broth, and milk. Stir well and bring to a gentle boil.

  • Reduce heat to medium-low, cover, and simmer for 10–12 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.

  • Remove from heat and stir in shredded cheese until melted and creamy.

  • Let rest for 2 minutes, then garnish if desired and serve warm.

Notes

For extra creaminess, add 2 tablespoons cream cheese or a splash of heavy cream at the end.
Use freshly shredded cheese for smoother melting — pre-shredded cheese can make sauces grainy.
If the sauce thickens too much, stir in a little warm milk or broth to loosen it.
Want more flavor? Add a dash of Worcestershire sauce or mustard powder.
This dish reheats beautifully — just add a splash of milk before warming.
