- 1 pound ground beef or turkey sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups mixed vegetables (fresh, frozen, or canned)
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes (or crushed tomatoes)
- 2 cups cooked macaroni or pasta of your choice
- 1 teaspoon chili powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups shredded cheese (cheddar or a blend)
- 1 cup vegetable stock or broth (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Add oil to a large skillet over medium heat, and add the ground beef or turkey sausage. Cook until browned, about 5-7 minutes.
- Toss in the chopped onions and minced garlic, and sauté until fragrant, about 3-4 minutes.
- Stir in the mixed vegetables and kidney beans, followed by the diced tomatoes.
- Season the mixture with chili powder, Italian seasoning, salt, and pepper, allowing to cook for another 5 minutes.
- Fold in the cooked macaroni or pasta.
- Transfer the mixture to a large casserole dish and sprinkle with shredded cheese.
- Cover with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Notes
For a healthier alternative, use lentils instead of meat or zucchini noodles instead of pasta.
