- 1 pound ground beef or chicken
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 cups mixed vegetables (like green beans, corn, and carrots)
- 4 medium potatoes, thinly sliced
- 2 cups shredded cheese (cheddar or mozzarella)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup beef or chicken broth
- Salt and pepper to taste
- Optional: fresh herbs (like parsley or thyme) for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef or chicken in a large skillet over medium heat. Drain excess fat and add the chopped onion and minced garlic. Cook until the onions are translucent, about 5 minutes.
- Spread the cooked meat mixture evenly in the bottom of a greased 9×13 inch baking dish. Layer on the mixed vegetables and then the sliced potatoes.
- Combine the cream of mushroom soup and broth in a mixing bowl. Pour this mixture over the layered ingredients.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and sprinkle the shredded cheese on top. Return the dish to the oven for an additional 10-15 minutes until the cheese is melted and bubbly. Let it sit for 10 minutes before serving.
Notes
For healthier options, use lean ground turkey instead of beef and consider a homemade sauce using Greek yogurt. Store leftovers in an airtight container for 3-4 days, or freeze for up to 2-3 months.
