Ingredients

  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, chilled and cubed
  • 3/4 cup buttermilk (or use milk with 1 tablespoon of vinegar as a substitute)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup brown sugar, for the filling
  • 1 tablespoon cinnamon, for the filling
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: Cinnamon glaze (1 cup powdered sugar, 2 tablespoons milk, and 1 teaspoon cinnamon)

Instructions

  1. Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
  3. Add the chilled, cubed butter to the flour mixture. Using a pastry cutter, mix until coarse crumbs form.
  4. In a separate bowl, whisk together the buttermilk and vanilla extract.
  5. Gradually pour this mixture into the dry ingredients, stirring gently until just combined.
  6. On a lightly floured surface, turn the dough out and knead it a few times to bring it together.
  7. Mix together the brown sugar and cinnamon, then spread over the dough.
  8. Fold the dough over itself in thirds, then pat down into a rectangle and cut into triangles.
  9. Place the scones on the prepared baking sheet and bake for about 20-25 minutes.
  10. Once baked, allow the scones to cool slightly on a wire rack and drizzle with glaze if desired.

Notes

Consider using plant-based butter for a vegan version. Pair with fresh fruits or clotted cream for serving.
