- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil or vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: chopped fresh parsley for garnish
Instructions
- Start by heating the olive oil in a large skillet over medium-high heat.
- Season your chicken thighs with paprika, salt, and pepper.
- Place the chicken thighs skin-side down in the hot skillet.
- Cook for about 5-7 minutes until the skin turns golden brown, then flip and cook for an additional 5-7 minutes.
- Remove the chicken from the skillet and set it aside.
- Add the chopped onion to the skillet and sauté until translucent, about 3-5 minutes.
- Stir in the minced garlic and cook for another minute.
- Pour in the chicken broth and scrape the bottom of the skillet.
- Bring the broth to a simmer.
- Reduce the heat to low, returning the chicken to the skillet.
- Simmer for about 20 minutes, covered, until the chicken is cooked through.
- Stir in the heavy cream and thyme and let it simmer uncovered for 5-10 minutes.
- Garnish with chopped parsley and serve warm.
Notes
Serve this dish over mashed potatoes or rice. Adjust cooking times if using boneless chicken thighs.
