- 4 skinless, boneless chicken breasts
- 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)
- 3 tablespoons Dijon mustard
- 2 tablespoons olive oil
- 1 tablespoon honey (or maple syrup for a vegan option)
- 4 cloves garlic, minced
- ½ teaspoon black pepper
- 1 teaspoon sea salt (or to taste)
- 1 cup low-sodium chicken broth
- Fresh rosemary sprigs for garnish (optional)
Instructions
- Start by preparing your marinade. In a medium bowl, mix the Dijon mustard, honey (or maple syrup), olive oil, minced garlic, chopped rosemary, black pepper, and sea salt.
- Place the chicken breasts in a large zip-top bag or a shallow dish and pour the marinade over them. Seal and toss to coat.
- Preheat your oven to 375°F (190°C). Remove excess marinade from chicken.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and sear for 3-4 minutes until golden brown.
- Pour chicken broth into the skillet around the chicken. Transfer to the oven and bake for 20 minutes or until the internal temperature reaches 165°F (74°C).
- Remove from oven and let chicken rest for a few minutes.
- Garnish with fresh rosemary sprigs, slice, and serve with remaining juices.
Notes
For added flavor, marinate your chicken overnight. Substitute chicken with tofu for a vegetarian option.
