Instructions
- Preheat your oven to 400°F (200°C) and prepare your baking dish by lightly greasing it with olive oil.
- Combine the Dijon mustard, chopped rosemary, minced garlic, lemon juice, olive oil, salt, and pepper in a medium-sized bowl. Whisk until smooth.
- Place the chicken breasts in the prepared baking dish and pour the marinade over them, ensuring they are well coated.
- Bake for about 25 minutes or until the chicken is cooked through (internal temperature of 165°F). Check midway to prevent overcooking.
- Let the chicken rest for about five minutes, then slice against the grain and serve garnished with fresh rosemary.
