- 1/2 teaspoon vanilla extract
- A pinch of salt
- Optional: 1/2 cup chopped nuts (like walnuts or pecans)
- Optional: 1/2 cup chocolate chips
- Optional: 1/4 cup raisins or dried cranberries
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it with oil or lining it with muffin liners.
- Combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt in a mixing bowl.
- Mix the wet ingredients in another bowl: whisk together the eggs (or flax eggs), honey (or maple syrup), applesauce, vegetable oil, and vanilla extract.
- Add the grated zucchini and carrots into the wet mixture, stirring gently.
- Combine the wet and dry ingredients, folding them together until just combined.
- Fold in nuts or chocolate chips if using.
- Spoon the batter into the muffin tin, filling each cup about three-quarters full.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
