Ingredients

  • 1 cup unsweetened applesauce
  • 1 medium apple, diced
  • 1 cup almond milk or any milk alternative
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon salt
  • Optional toppings: chopped nuts, additional diced apples, yogurt, or maple syrup

Instructions

  1. Blend the rolled oats in a blender until fine, resembling flour.
  2. Combine the oat flour with baking powder, cinnamon, and salt in a large mixing bowl.
  3. Pour in the applesauce, almond milk, vanilla extract, and maple syrup. Stir until just combined.
  4. Fold in the diced apple until evenly distributed.
  5. Preheat a skillet over medium heat, lightly greased if needed. Pour 1/4 cup of batter per pancake.
  6. Cook for 2-3 minutes until bubbles form, then flip and cook until golden brown.

Notes

Avoid overmixing to ensure fluffy pancakes. Can be stored in an airtight container in the fridge for 3 days or frozen for up to 2 months.
