Description

A quick and nutritious one-pan meal featuring ground turkey and zucchini, perfect for busy weeknights.


Ingredients

  • 1 pound ground turkey (lean)
  • 2 medium zucchinis, sliced
  • 1 bell pepper, diced (any color)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes (undrained)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional: Grated cheese (for topping)
  • Optional: Fresh basil or parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onions and sauté until translucent, about 3–4 minutes.
  3. Include minced garlic and diced bell pepper; stir for about 2 minutes.
  4. Add ground turkey and break it up as it cooks, about 5–7 minutes.
  5. Pour in the undrained diced tomatoes, adding Italian seasoning, salt, and pepper; stir and let simmer.
  6. Mix in sliced zucchinis, cover, and cook for about 5–7 minutes until tender but crisp.
  7. Sprinkle grated cheese during the last minutes of cooking until melted (optional).

Notes

Pre-chop vegetables to save time on busy nights. Great variations include using chicken or turkey sausage.
