- 1 medium head of cauliflower, riced
- 1 cup broccoli florets
- 1 cup diced bell peppers
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 cup shredded low-fat cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onions and garlic, sautéing until softened, about 2-3 minutes.
- Add your diced chicken breast to the skillet, seasoning with salt, pepper, Italian seasoning, and paprika. Cook until the chicken is no longer pink, about 5-7 minutes.
- Once your chicken is cooked through, stir in the riced cauliflower, broccoli florets, and bell peppers. Pour the chicken broth, mixing everything until well combined. Let it simmer for 5-10 minutes.
- Transfer the mixture to a greased 9×13-inch baking dish. Top with shredded cheese.
- Place the casserole in the oven and bake for 25-30 minutes, until the cheese is bubbly and golden brown.
- Once done, let it cool for a few minutes before serving with fresh parsley if desired.
