- 1 cup sushi rice
- 1 ¼ cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- ½ teaspoon salt
- 1 ripe avocado, sliced
- 1 cup cucumber, thinly sliced
- ½ cup shredded carrots
- ½ cup imitation crab meat (or shredded cooked chicken)
- 2 green onions, chopped
- 2 sheets of nori, cut into thin strips
- Sesame seeds (for garnish)
- Soy sauce, for serving
Instructions
- Start by rinsing your sushi rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed sushi rice and water. Bring it to a boil, then reduce the heat to low. Cover and let it simmer for about 18-20 minutes.
- While the rice cooks, mix rice vinegar, sugar, and salt in a small bowl. Microwave this mixture for about 30 seconds until the sugar dissolves.
- Once the rice is cooked, remove it from heat and let it sit covered for an additional 10 minutes. Transfer the rice to a large bowl and fold in the sushi vinegar gently.
- As the rice cools, prepare your toppings by slicing the avocado, cucumber, and green onions.
- To assemble your sushi bowls, start with a base of sushi rice in each bowl. Layer on the avocado, cucumber, shredded carrots, and imitation crab meat.
- Finally, sprinkle sesame seeds on top for added flavor and crunch. Serve with soy sauce on the side.
