  • 1 cup diced carrots

  • 3 cloves garlic, minced

  • 1 can (14 oz) diced tomatoes, with juice
  • 1 cup green beans, chopped (fresh or frozen)
  • 1 cup corn (fresh or frozen)
  • 2 medium potatoes, diced
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • Optional: 1 cup of peas for extra color and flavor
  • Optional: Fresh parsley for garnish

Instructions

  1. In a large pot over medium-high heat, begin by browning the ground beef. Cook until it’s no longer pink, making sure to crumble it as it cooks.
  2. Once the meat is cooked, add the diced onion, carrots, and celery to the pot. Sauté these vegetables for about 5-7 minutes until they’re tender and the onion becomes translucent.
  3. Introduce the minced garlic and cook for an additional minute, allowing the fragrant aroma to fill your kitchen.
  4. Stir in the diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring the mixture to a gentle boil.
  5. Add in the chopped green beans, corn, and potatoes, giving everything a good stir. Reduce the heat to low, cover, and let it simmer for about 20 minutes.
  6. If you opted for peas, toss them in during the last few minutes of cooking.
