  • 3 cups cooked rice or quinoa
  • 2 cups cherry tomatoes, halved
  • 1.5 cups fresh corn kernels
  • 2 large ripe avocados, diced
  • 1/2 medium red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup Greek yogurt
  • 1/2 cup mayonnaise
  • Salt and black pepper to taste

Instructions

  1. 1. In a large bowl, combine olive oil, half the minced garlic, lemon juice, paprika, cumin, salt, and pepper to create the marinade.
  2. 2. Add cleaned and dried shrimp to the marinade, toss to coat evenly, and let sit for 20-30 minutes at room temperature.
  3. 3. Meanwhile, sauté remaining garlic in a small pan with oil until golden and fragrant, then cool slightly.
  4. 4. Mix sautéed garlic with Greek yogurt, mayonnaise, lemon juice, salt, and pepper to create the creamy garlic sauce.
  5. 5. If using fresh corn, char it on the grill or in a grill basket for about 5 minutes, stirring occasionally.
  6. 6. Combine grilled corn with cherry tomatoes, red onion, and cilantro to make the fresh salsa.
  7. 7. Preheat grill to medium-high heat (375-400°F), clean and oil the grates thoroughly.
  8. 8. Thread shrimp onto skewers or place directly on grill, cooking 2-3 minutes per side until pink and opaque.
  9. 9. In serving bowls, arrange cooked rice or quinoa as the base, then add sections of corn salsa and diced avocado.
  10. 10. Top with grilled shrimp, drizzle generously with creamy garlic sauce, and garnish with fresh cilantro and lime wedges.

Notes

Store components separately in airtight containers in the refrigerator. Shrimp keeps for 3 days, sauce for 5 days, and grains for up to 5 days. Dice avocados fresh before serving.
