Grilled Flank Steak Caprese with Balsamic Dressing

  • Author: Mark Bennett
  • Total Time: 42 minutes
  • Yield: 6 servings 1x

Description

Tender grilled flank steak topped with fresh mozzarella, cherry tomatoes, and basil, drizzled with homemade balsamic dressing for an elegant Italian-American fusion dish.

Ingredients

Scale
  • 2 pounds flank steak
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces fresh mozzarella cheese, sliced
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh basil leaves
  • 1/3 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/2 cup extra virgin olive oil (for dressing)

Instructions

  1. 1. Remove flank steak from refrigerator 30 minutes before grilling to bring to room temperature.
  2. 2. Mix olive oil, minced garlic, salt, and pepper in a small bowl. Rub mixture all over both sides of the steak.
  3. 3. Preheat grill to high heat (450-500°F). Clean and oil the grill grates.
  4. 4. Place steak on the hottest part of the grill and cook undisturbed for 5-6 minutes until a nice char develops.
  5. 5. Flip steak and cook another 5-6 minutes for medium-rare (internal temperature 130-135°F).
  6. 6. Transfer steak to a cutting board, tent with foil, and let rest for 10 minutes.
  7. 7. While steak rests, make balsamic dressing by whisking together balsamic vinegar, honey, and Dijon mustard. Slowly drizzle in extra virgin olive oil while whisking to emulsify.
  8. 8. Slice steak against the grain into 1/4-inch thick strips.
  9. 9. Arrange sliced steak on a platter, top with mozzarella slices, cherry tomatoes, and torn basil leaves.
  10. 10. Drizzle balsamic dressing over the entire dish and serve immediately.

Notes

Store leftover steak, toppings, and dressing separately in airtight containers. Steak keeps 3-4 days, fresh toppings 2 days, dressing 1 week. Can be prepared on stovetop in cast-iron skillet or under broiler if grill unavailable. For best results, slice steak against the grain for maximum tenderness.
