Description

A refreshing Mediterranean salad with cucumbers, tomatoes, feta cheese, and a tangy dressing.


Ingredients

  • 2 large cucumbers, peeled and diced
  • 1 pint cherry tomatoes, halved
  • 1 bell pepper (red or green), diced
  • 1 small red onion, finely sliced
  • 1 cup Kalamata olives, pitted and halved
  • 1 cup feta cheese, crumbled
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons dried oregano
  • Salt and pepper to taste

Instructions

  1. Wash all your fresh produce under cold water.
  2. Peel the cucumbers if you prefer, then dice them into bite-sized pieces.
  3. Halve the cherry tomatoes and add them to a large mixing bowl.
  4. Dice your bell pepper and finely slice the red onion.
  5. Toss in the Kalamata olives.
  6. Crumble the feta cheese over your vegetable medley.
  7. Whisk together the olive oil, red wine vinegar, oregano, salt, and pepper to create your dressing.
  8. Drizzle the dressing over the salad and gently toss everything together.
  9. Allow the salad to sit for about 10-15 minutes before serving.
