Decadent blondies combining rich cookie butter, graham crackers, marshmallows, and chocolate for an irresistible s’mores-inspired treat


Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup cookie butter (Biscoff spread)
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup graham cracker crumbs
  • 1 1/2 cups mini marshmallows
  • 1 cup semi-sweet chocolate chips
  • 2 ounces milk chocolate bar, broken into pieces

Instructions

  1. 1. Preheat oven to 350°F and line a 9×13-inch baking pan with parchment paper, leaving overhang on two sides.
  2. 2. In a large bowl, whisk together melted butter, cookie butter, and brown sugar until smooth and glossy, about 2 minutes.
  3. 3. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  4. 4. Gently fold in flour, baking powder, and salt until just combined, avoiding overmixing.
  5. 5. Spread half of the batter evenly into the prepared pan.
  6. 6. Sprinkle graham cracker crumbs over the batter, pressing gently, then distribute half the marshmallows and half the chocolate pieces.
  7. 7. Carefully spread remaining batter over the filling layer as evenly as possible.
  8. 8. Top with remaining marshmallows and chocolate pieces, pressing slightly into the surface.
  9. 9. Bake for 30-35 minutes until edges pull away from the pan and center jiggles slightly when gently shaken.
  10. 10. Cool on a wire rack for 45 minutes, then refrigerate for 30 minutes before cutting into squares.

Notes

Store in an airtight container at room temperature for up to 5 days or refrigerate for up to 10 days. Freeze individual wrapped squares for up to 3 months. For cleanest cuts, wipe knife between each slice.
