- 8 bone-in, skin-on chicken thighs (about 3 pounds)
- 3/4 cup freshly grated Parmesan cheese
- 6 garlic cloves, minced
- 3 tablespoons olive oil
- 2 tablespoons butter, melted
- 1 tablespoon Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Lemon wedges for serving (optional)
Instructions
- 1. Preheat oven to 425°F and line a large baking sheet with parchment paper.
- 2. Pat chicken thighs completely dry with paper towels and arrange skin-side up on the baking sheet.
- 3. In a small bowl, combine minced garlic, melted butter, and olive oil. Brush this mixture generously over each chicken thigh.
- 4. In another bowl, mix together grated parmesan, Italian seasoning, paprika, salt, and black pepper.
- 5. Sprinkle the parmesan mixture liberally over each chicken thigh, pressing gently to adhere.
- 6. Bake for 35-45 minutes until skin is golden brown and crispy, and internal temperature reaches 165°F.
- 7. For extra crispy skin, broil for the last 2-3 minutes, watching carefully to prevent burning.
- 8. Remove from oven and let rest for 5 minutes.
- 9. Garnish with fresh parsley and serve with lemon wedges if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F oven for 15-20 minutes. Can be frozen for up to 3 months. Pairs wonderfully with roasted vegetables, mashed potatoes, or a fresh green salad.
