- 1.5 pounds sirloin steak, cut into 1-inch cubes
- 4 tablespoons unsalted butter
- 6 cloves fresh garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper, freshly ground
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- 1. Remove steak from refrigerator 30 minutes before cooking and pat completely dry with paper towels. Cut into uniform 1-inch cubes and season generously with salt and pepper.
- 2. Heat a cast-iron skillet or heavy-bottomed pan over high heat for 5 minutes until smoking hot. Add olive oil and swirl to coat.
- 3. Working in batches to avoid overcrowding, add steak cubes in a single layer with space between each piece. Sear undisturbed for 2 minutes until golden-brown crust forms.
- 4. Flip each piece and sear the opposite side for another 2 minutes until browned on all sides.
- 5. Reduce heat to medium and add butter to the pan. As it melts and foams, add minced garlic and stir constantly for 30-60 seconds.
- 6. Spoon the garlic butter over the steak bites repeatedly for about 1 minute, basting them thoroughly.
- 7. Remove from heat and garnish with fresh chopped parsley and optional red pepper flakes. Serve immediately.
Notes
Store leftover steak bites in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium-low heat with a pat of butter. For best results, cook steak to medium-rare (130-135°F internal temperature). Serve with mashed potatoes, roasted vegetables, or over a bed of fresh greens.
