- 1 cup of grated zucchini (about 1 medium zucchini)
- 1 cup of shredded sharp cheddar cheese
- 1 ½ cups of all-purpose flour
- ½ cup of granulated sugar
- ½ teaspoon of baking powder
- ½ teaspoon of baking soda
- 1 teaspoon of salt
- 1 teaspoon of garlic powder (optional)
- 2 large eggs
- ½ cup of vegetable oil (or melted coconut oil)
- ¼ cup of milk (any kind)
- 1 teaspoon of fresh dill or parsley (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Combine the grated zucchini and shredded cheddar cheese in a mixing bowl. Add eggs, vegetable oil, and milk, and mix well.
- Whisk together the flour, sugar, baking powder, baking soda, salt, and garlic powder in another bowl.
- Gradually add the dry mixture into the wet ingredients, folding gently.
- Pour the batter into the prepared loaf pan and smooth out the top.
- Bake for 50-60 minutes, or until a toothpick comes out clean when inserted into the center.
- Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Notes
For healthier alternatives, use unsweetened applesauce instead of oil and flax eggs in place of eggs to make it vegan.
