Ingredients

- 2 cups Greek yogurt (plain or flavored)
- 1 cup creamy peanut butter (or almond butter)
- 2–4 tablespoons honey or maple syrup (to taste)
- 1 teaspoon vanilla extract (optional)
- Mini chocolate chips or chopped nuts (for topping, optional)
- Sliced fruit, like bananas or strawberries (for layering, optional)
- Pinch of salt
Instructions
- Start by lining a muffin tin with paper liners or silicone molds.
- Combine Greek yogurt and peanut butter in a mixing bowl and stir until well blended.
- Sweeten the mixture by gradually adding honey or maple syrup, adjusting to taste.
- Place a spoonful of the yogurt-peanut butter mixture into the bottom of each mold if you’d like layers.
- Sprinkle some mini chocolate chips or chopped nuts on top, and you can add sliced fruit before covering with more yogurt mixture.
- Fill each mold with the yogurt-peanut butter mix until about three-quarters full.
- Pop the muffin tin into the freezer for about two hours, or until solid.
- Once they’re frozen, gently peel away the molds or liners and enjoy your bites.
Notes
These can be stored in an airtight container in the freezer for up to three months. Let them sit out for a couple of minutes to soften before eating.
