Description
A quick, creamy, and crunchy Tex-Mex slaw that’s perfect as a side dish or party dip.
Ingredients

- 6 cups shredded cabbage
- 1 cup shredded cheddar cheese
- 2 cups Fritos
- 1/2 cup green onions, sliced
- 1 cup corn (optional)
- 1 cup black beans (optional)
- 1–2 diced jalapenos (optional)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- Juice of 1 lime
- 1/2 cup salsa or drained Rotel tomatoes
- Salt to taste
- Pepper to taste
- Pinch of chili powder
Instructions
- Add shredded cabbage to a large mixing bowl. If wet, pat dry with a paper towel.
- Toss in cheddar and green onions (and optional corn or beans).
- Mix mayonnaise, sour cream, lime juice, salsa, salt, pepper, and chili powder in a small bowl. Taste and adjust.
- Pour dressing over cabbage mixture and stir until evenly coated.
- Fold in Fritos right before serving for maximum crunch.
Notes
If making ahead, keep Fritos separate until serving to maintain crunchiness.
