Ingredients

- 10–12 garlic cloves, peeled
- 4 cups vegetable or chicken broth
- 1 medium onion, chopped
- 4 tablespoons butter or ghee
- 1 tablespoon olive oil
- 2–3 sprigs of fresh thyme (or 1 teaspoon dried thyme)
- 1 bay leaf
- Salt and pepper, to taste
- 1 cup heavy cream (or coconut cream for a dairy-free option)
- Crusty bread, for serving
- Chopped parsley, for garnish
- Optional: A squeeze of fresh lemon juice or a dash of cayenne pepper for a kick
Instructions
- Start by melting the butter and olive oil in a large pot over medium heat. Once melted, add the chopped onion and sauté until it’s soft and translucent, about 5-7 minutes.
- Now, add the garlic cloves. Stir them in and cook for another 5 minutes, being careful not to let them burn.
- Pour in the broth and toss in the thyme and bay leaf. Bring to a gentle boil, then reduce heat and let simmer for around 20 minutes.
- After simmering, remove the bay leaf and thyme sprigs, then use an immersion blender to puree the soup until smooth.
- Once blended, return it to the pot and stir in the heavy cream. Warm through and adjust seasoning with salt and pepper to taste.
- Serve the soup hot, garnished with chopped parsley and accompanied by crusty bread.
Notes
Consider using lower-sodium broth and plant-based alternatives to make it vegan-friendly.
