- 2 cups of fresh mushrooms, sliced
- 1 large onion, diced
- 2 cloves of garlic, minced
- 1 cup of chicken broth

- 1 teaspoon of rosemary (fresh or dried)
- 1 cup of frozen peas
- 2 cups of diced potatoes (or substitute with cauliflower)

Instructions
- Preheat your oven to 375°F (190°C).
- Heat a tablespoon of olive oil in a large skillet over medium heat; add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and cook for another minute.
- Toss in the sliced mushrooms and cook until golden brown, about 5-7 minutes.
- Season the chicken thighs with salt, pepper, thyme, and rosemary, and add them to the skillet to cook for about 5 minutes on each side.
- Pour in the chicken broth and heavy cream, stirring until it reaches a gentle simmer.
- Fold in the frozen peas and diced potatoes, stirring to combine.
- Transfer the mixture into a baking dish, sprinkling cheese on top if desired.
- Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes.
