- 12 large croissants, halved horizontally
- 12 large eggs
- 1/4 cup whole milk
- 12 cooked breakfast sausage patties or bacon strips
- 12 slices cheddar cheese
- 2 tablespoons unsalted butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 sheets aluminum foil
- 12 sheets parchment paper
Instructions
- 1. Whisk together eggs, milk, salt, and pepper in a large bowl until well combined and slightly frothy.
- 2. Heat butter in a large non-stick skillet over medium-low heat. Pour in egg mixture and scramble gently until just set but still glossy. Transfer to a parchment-lined baking sheet to cool.
- 3. Cook sausage patties or bacon according to package directions until fully cooked. Drain on paper towels and let cool completely.
- 4. Slice croissants in half horizontally. Place bottom halves on your work surface.
- 5. Layer each croissant bottom with one slice of cheese, one sausage patty or bacon strips, and a portion of scrambled eggs.
- 6. Place croissant tops on each sandwich and press down gently to compact.
- 7. Wrap each sandwich in parchment paper first, then wrap in aluminum foil. Label with date.
- 8. Place wrapped sandwiches in a freezer-safe bag or container and freeze for up to 3 months.
- 9. To reheat from frozen: Microwave wrapped in damp paper towel on 50% power for 90 seconds, flip, then 60-90 seconds more. Or bake at 350°F for 20-25 minutes.
Notes
Store wrapped sandwiches in freezer for up to 3 months. Can substitute any breakfast meat or cheese. For crispier croissants, remove parchment during last 5 minutes of oven reheating. Sandwiches can be refrigerated for up to 3 days instead of frozen.
