Ingredients

  • 4 cups watermelon, diced
  • 2 cups cucumber, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Start by gathering all your ingredients. Rinse the cucumbers and watermelon thoroughly under cold water.
  2. Next, slice the watermelon into bite-sized pieces. Prepare the cucumbers by dicing them into equally sized pieces.
  3. In a mixing bowl, combine the diced watermelon and cucumber. Add the red onion and chopped mint leaves.
  4. In a small bowl, whisk together the olive oil and balsamic vinegar. Drizzle over the salad mixture and gently toss.
  5. Finally, sprinkle the crumbled feta cheese over the top, season with salt and pepper, and give it a light toss once more.

Notes

Serve immediately after preparing to avoid sogginess from the watermelon. Store leftovers in an airtight container for up to 24 hours.
