Ingredients

  • 4 medium-sized zucchinis
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil (for drizzling)
  • Optional: 1/2 cup diced tomatoes or bell peppers

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the zucchinis thoroughly, cut them in half lengthwise and scoop out the center, leaving about a 1/4-inch border.
  3. Combine the feta cheese, cream cheese, grated Parmesan cheese, parsley, garlic, oregano, and scooped zucchini flesh in a mixing bowl.
  4. Spoon the cheesy mixture into each zucchini half.
  5. Arrange the stuffed zucchinis in a baking dish and drizzle with olive oil.
  6. Bake in the oven for about 25 minutes or until the zucchini is tender.
  7. Remove from oven and let them cool for a few minutes before serving hot.

Notes
