Fall-Off-The-Bone Dry Rub Ribs

  • Author: Mark Bennett
  • Total Time: 5 hours 20 minutes
  • Yield: 6 servings 1x

Description

Incredibly tender baby back ribs seasoned with a perfect blend of spices and cooked low and slow until they fall off the bone. No grill required!

Ingredients

Scale
  • 2 racks baby back ribs (4–5 pounds)
  • 1/4 cup brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon black pepper
  • 1 tablespoon kosher salt
  • 1 tablespoon chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1/4 cup apple cider vinegar
  • Heavy-duty aluminum foil

Instructions

  1. 1. Preheat oven to 275°F and line a large baking sheet with foil.
  2. 2. Remove the membrane from the back of each rib rack by sliding a knife underneath and pulling it off with a paper towel.
  3. 3. In a small bowl, combine brown sugar, paprika, black pepper, salt, chili powder, garlic powder, onion powder, cayenne pepper, and oregano to create the dry rub.
  4. 4. Pat ribs dry with paper towels and generously apply the dry rub to all surfaces, massaging it into the meat.
  5. 5. Place ribs bone-side down on the prepared baking sheet and cook uncovered for 2 hours.
  6. 6. Remove ribs from oven and tightly wrap each rack in heavy-duty aluminum foil with a splash of apple cider vinegar.
  7. 7. Return wrapped ribs to oven and cook for an additional 2 hours.
  8. 8. Carefully unwrap the ribs and return them to the oven for 30-60 minutes to firm up the exterior.
  9. 9. Remove from oven when meat has pulled back from bones and internal temperature reaches 195-203°F.
  10. 10. Let rest for 10-15 minutes before cutting between bones to serve.

Notes

Store leftover ribs in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat wrapped in foil at 250°F for 20-30 minutes. For best results, let rubbed ribs sit in the refrigerator for 4-24 hours before cooking to allow flavors to penetrate.
