- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 cup unsalted butter (cold, cut into cubes)
- 1 cup raspberry jam or preserves
- 1/4 teaspoon salt
Instructions
- 1. Preheat your oven to 350°F. Line a 9×13-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
- 2. In a large mixing bowl, combine the flour, sugar, and salt. Add the cold butter cubes.
- 3. Using a pastry cutter, fork, or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse crumbs, about 3-5 minutes.
- 4. Reserve 1 1/2 cups of the crumb mixture for the topping. Press the remaining mixture firmly and evenly into the bottom of the prepared pan.
- 5. Spread the raspberry jam evenly over the crust layer, leaving a 1/4-inch border around the edges.
- 6. Sprinkle the reserved crumb mixture evenly over the jam layer, covering it completely.
- 7. Bake for 40-45 minutes, until the top is golden brown and the jam is bubbling gently around the edges.
- 8. Remove from oven and place on a wire rack to cool completely in the pan, about 2 hours.
- 9. Using the parchment paper overhang, lift the cooled bars onto a cutting board. Cut into squares using a sharp knife, wiping clean between cuts.

Store in an airtight container at room temperature for up to 3 days, refrigerated for up to 1 week, or frozen for up to 3 months. These bars taste even better the next day after the flavors have melded together. Dust with powdered sugar before serving for an elegant presentation.
