  • 2 cups grated zucchini (about 2 medium zucchinis, squeezed dry)

  • 1 cup rolled oats

  • 1/2 cup unsalted butter, melted (or coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped nuts (walnuts or pecans) or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
  2. Combine the grated zucchini with the sugars and melted butter in a large mixing bowl.
  3. Add the eggs and vanilla extract, mixing until well incorporated.
  4. Whisk together the flour, rolled oats, cinnamon, baking powder, and salt in another bowl.
  5. Incorporate the dry ingredients into the wet mixture and stir gently until just combined.
  6. Pour the batter into the prepared baking dish and spread evenly.
