- 1/2 cup cotija cheese, crumbled
- 2 medium avocados, sliced
- 3 tablespoons lime juice
- 1/2 cup sour cream or Greek yogurt
- 2 tablespoons mayonnaise
Instructions
- 1. In a small bowl, combine chili powder, cumin, paprika, garlic powder, salt, and black pepper to create the spice blend.
- 2. Pat chicken breasts dry and rub the spice mixture generously over all surfaces.
- 3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
- 4. While chicken cooks, heat a cast-iron skillet over high heat. Add corn kernels in a single layer and char for 2-3 minutes without stirring, then toss and repeat until golden brown spots appear.
- 5. In a small bowl, whisk together sour cream, mayonnaise, lime juice, and a pinch of salt to create lime crema.
- 6. Divide cooked rice or quinoa among four bowls. Top each with sliced chicken, charred corn, cherry tomatoes, red onion, avocado slices, and crumbled cotija cheese.
- 7. Drizzle lime crema over each bowl and garnish with fresh cilantro. Serve immediately.
