- 2 lbs boneless, skinless chicken thighs
- 1 cup orange juice
- 1/4 cup soy sauce
- 1/4 cup honey or maple syrup
- 1 tablespoon rice vinegar
- 2 teaspoons minced garlic
- 1 teaspoon grated ginger
- 1/2 teaspoon red pepper flakes
- 2 tablespoons cornstarch
- 1 tablespoon water
- Sliced green onions (for garnish)
- Sesame seeds (for garnish)
Instructions
- Start by preparing your chicken. If you’re using thighs, trim any excess fat.
- Place them directly into the slow cooker.
- Next, in a separate mixing bowl, combine the orange juice, soy sauce, honey (or maple syrup), rice vinegar, minced garlic, grated ginger, and red pepper flakes.
- Whisk them together until smooth and well-integrated.
- Pour the sauce over the chicken in the slow cooker.
- Cover and set your slow cooker to high for about four hours or low for six to seven hours.
- Once the cooking time is up, remove the chicken and set it aside.
- In a small bowl, dissolve the cornstarch in the water until smooth.
- Stir this mixture into the remaining sauce in the slow cooker and cook for an additional 15-20 minutes on high to thicken the sauce.
- During the last few moments, shred the chicken with two forks and return it to the slow cooker.
- Finally, serve it up! Garnish with sliced green onions and sesame seeds.
Notes
For a vegan alternative, substitute chicken with firm tofu, tempeh, or seitan.
