- 1 cup coconut milk (or almond milk)
- 1/4 cup maple syrup (or honey)
- 1/4 cup chia seeds
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup graham cracker crumbs (or almond flour for a gluten-free option)
- 4 tablespoons melted coconut oil (or butter)
Instructions
- Start by blending the blueberries in a food processor or blender until smooth.
- In a medium bowl, combine the blueberry puree, coconut milk, maple syrup, chia seeds, vanilla extract, and salt. Stir well.
- Allow the mixture to sit for about 10 minutes to let the chia seeds absorb the liquid.
- Meanwhile, prepare the crust by mixing the graham cracker crumbs with melted coconut oil in a separate bowl.
- Press the crumb mixture into the bottom of an 8-inch pie dish.
- Pour the chia filling over the crust and smooth out the top with a spatula.
- Pop the pie into the fridge for at least two hours to set.
- Remove the pie from the fridge and garnish with fresh blueberries or chia seeds before serving.
Notes
This pie can be made ahead of time and stored in the refrigerator for 5 to 7 days, or frozen for up to a month.
