- 2 bell peppers, diced (any color)

- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Start by heating up the olive oil in a large skillet over medium heat. Ensure the skillet is hot enough that when you add your diced potatoes, they sizzle.
- Toss in the diced potatoes and season them with salt and pepper. Stir frequently and cook for about 10 minutes or until they turn golden brown.
- Add the chopped onion and diced bell peppers to your skillet. Stir occasionally and cook for an additional 5 minutes.
- Now, add the sliced kielbasa, minced garlic, and paprika. Cook for another 5-7 minutes, stirring occasionally until heated through.
- Once everything is nicely combined, taste your skillet dish and adjust seasoning if needed.
