  • 1 large head of Romaine lettuce (or butter lettuce)
  • 1 pound ground turkey (or beef, chicken, or lamb)
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (mix of red, green, and yellow)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese (or nutritional yeast for dairy-free)
  • Fresh basil leaves for garnish
  • Optional: chopped tomatoes, olives, or pepperoncini

Instructions

  1. Start by preparing your lettuce. Carefully rinse the leaves of Romaine (or whichever lettuce you chose) under cool running water. Pat them dry with a clean kitchen towel.
  2. Heat the olive oil in a large skillet over medium heat. Once hot, throw in the chopped onions and garlic. Sauté for about 2-3 minutes, or until the onions become translucent.
  3. Add the ground turkey to the skillet. Break it apart with a wooden spoon and cook until browned, about 5-7 minutes. Stir occasionally.
  4. Once the meat is cooked, stir in the diced bell peppers and Italian seasoning. Season with salt and pepper to taste. Cook for an additional 3-4 minutes.
  5. Sprinkle the grated Parmesan cheese over the mixture, stirring to combine. If using nutritional yeast, add it now.
  6. Remove the skillet from the heat and let the filling cool for a few minutes.
  7. Takes your clean lettuce leaves and spoon a generous amount of the filling into each one, topped with fresh basil.

Notes

For vegetarian options, swap the meat for sautéed mushrooms or lentils. Avoid overstuffing the lettuce to prevent messiness.
