- 2 medium zucchinis
- 1 pound ground beef (or ground turkey)
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese (or cheddar)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Rinse zucchinis and cut in half lengthwise, scooping out the flesh.
- In a large skillet over medium heat, add olive oil. Cook onion and garlic until translucent, about 3-4 minutes.
- Add ground beef to the skillet, season with salt, pepper, and Italian seasoning. Cook until browned, approximately 5-7 minutes.
- Stir in reserved zucchini flesh and marinara sauce. Cook for about 2 minutes to meld flavors.
- Spoon the filling into the hollowed zucchini halves, topping with shredded mozzarella cheese.
- Arrange stuffed zucchinis on a baking sheet lined with parchment paper. Bake for about 25-30 minutes until tender and cheese is bubbly.
- Remove from the oven, let cool briefly, and garnish with fresh basil or parsley.
Notes
For vegetarian options, substitute ground beef with lentils or finely chopped vegetables. Store leftovers in an airtight container for up to 3 days.
