Ingredients

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • ¼ teaspoon salt
  • 8 ounces cream cheese, softened
  • ⅓ cup powdered sugar
  • ½ teaspoon vanilla extract (for frosting)
  • 1 cup fresh strawberries, sliced
  • ½ cup fresh blueberries
  • 2 fresh kiwis, peeled and sliced
  • ½ cup mandarin oranges, drained
  • ½ cup fresh raspberries
  • ¼ cup apricot preserves (optional glaze)

Instructions

  1. 1. Preheat oven to 350°F and grease a 12-inch pizza pan or baking sheet.
  2. 2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. 3. Beat in the egg and vanilla extract until well combined.
  4. 4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. 5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. 6. Press dough evenly onto prepared pizza pan to about ¼ inch thickness.
  7. 7. Bake for 12-15 minutes until edges are light golden and center is set.
  8. 8. Remove from oven and cool completely on the pan.
  9. 9. Beat cream cheese until smooth and fluffy, then mix in powdered sugar and vanilla extract.
  10. 10. Spread cream cheese frosting evenly over cooled cookie crust, leaving a ½-inch border.
  11. 11. Arrange fresh fruits in desired pattern over the cream cheese layer.
  12. 12. Optional: warm apricot preserves with 1 tablespoon water, strain, and brush over fruit for glaze.
  13. 13. Refrigerate for at least 1 hour before slicing and serving.

Notes

Store covered in refrigerator for up to 24 hours. For best results, add fruit toppings no more than 6 hours before serving. Cookie crust can be baked up to 3 days in advance and stored at room temperature.
