  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon lemon zest
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 2 tablespoons olive oil

Instructions

  1. 1. Pat chicken cubes dry with paper towels and season lightly with salt and pepper. Set aside.
  2. 2. In a medium bowl, combine softened butter, parsley, chives, thyme, minced garlic, lemon juice, lemon zest, Dijon mustard, red pepper flakes, and smoked paprika. Mix thoroughly until well blended.
  3. 3. Heat olive oil in a large skillet over medium-high heat until shimmering.
  4. 4. Add chicken cubes to the skillet in a single layer, working in batches if necessary to avoid overcrowding.
  5. 5. Cook chicken for 3-4 minutes per side until golden brown and internal temperature reaches 165 degrees Fahrenheit.
  6. 6. Remove cooked chicken from heat and immediately toss with the prepared cowboy butter while still hot.
  7. 7. Transfer to a serving platter and garnish with additional fresh herbs and lemon wedges.
