  • 1 tablespoon lemon juice, freshly squeezed
  • ½ teaspoon garlic powder

Instructions

  1. Start by draining and rinsing your chickpeas. This removes any excess sodium and enhances their flavor. Once they’re cleaned, place them in a large mixing bowl.
  2. Chop the cucumber into bite-sized pieces. If you’re someone who enjoys the crunch, feel free to leave the skin on for added texture and nutrients. Add the cucumber pieces to the bowl with the chickpeas.
  3. Halve the cherry tomatoes, dice the red bell pepper, and finely chop the red onion. Make sure to use a sharp knife to get clean cuts, making it easier to munch on the salad later. Toss these freshly chopped ingredients into the bowl with the chickpeas and cucumbers.
  4. Add the chopped parsley to the mix. This not only enhances the flavor but also brings a pop of vibrant color to your salad.
