Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour (or a gluten-free alternative)
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup chicken broth or stock
  • 1/4 cup fresh lemon juice (about 1–2 lemons)
  • 1/4 cup capers, rinsed and drained
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for garnish – optional)
  • Additional herbs such as thyme or oregano (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Start by preparing your chicken. Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
  2. In a shallow dish, add the all-purpose flour. Dredge each chicken breast in the flour, shaking off any excess.
  3. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Once hot, add the floured chicken breasts. Cook for about 3-4 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set it on a plate. Cover it loosely with aluminum foil to keep warm.
  5. Add the chicken broth, lemon juice, and capers to the same skillet. Scrape the bottom with a wooden spoon to release brown bits for flavor.
  6. Let the sauce simmer for 2-3 minutes to reduce slightly, then whisk in the remaining butter until melted.
  7. Return the chicken to the skillet and spoon the sauce over it. Cook for an additional minute.
  8. Serve immediately, garnished with parsley and lemon slices if desired.

Notes

Serve over pasta or rice, and pair with sparkling water or herbal iced tea for the perfect meal.
